doc: Use @lisp instead of @example for Scheme snippets.

This is a followup to f8c143a7, which
allows syntax highlighting of @lisp snippets in the HTML output.

* doc/guix.texi, doc/contributing.texi: Use @lisp instead of @example
for all the Scheme snippets.
